You can set PDFs to be searchable and give the ability to copy/paste from them.
So you could take a printed document, scan to PDF, open the PDF and copy/past the text in to Word for editing.
To set up, click on OCR
You should be asked to download and install a language pack. If not, click the blue 'Get More Languages' (see window below) and download the UK pack.

Tick 'Make PDFs searchable using OCR'
Tick the box 'Automatically run OCR after scanning' and set the OCR mode to Best.
Next time you do a PDF with text, you should be able to search in or select the text to copy and paste elsewhere.
Remember Papercut also does Scan to Word from the Photocopiers - using the Scan to OneDrive function
